We’ll show you how we prepare lightly salted ide fillets 🧑🍳
INGREDIENTS
- Filleted fresh ide (1 large ide / 2 medium ides for home preparation)
- Water (1 L)
- Sea salt (100 g)
REQUIRED TOOLS
- A food container or glass baking dish large enough to fit the fillets
- Timer
1. Prepare the brine
- Measure 1 L (liter) of cold water into a container.
- Add 100 g of sea salt (use sea salt, as it works more slowly and gently than regular fine salt)
- Stir well until the salt has dissolved. The water will become slightly cloudy – this is a sign of the correct concentration.
2. Marinating the fish
- Place the ide fillets in a food container or baking dish. The fillets can overlap slightly if the container is narrow.
- Pour the brine over the fish. Ensure the fillets are completely submerged.
3. Marination time
- Set the timer for 45 minutes (you can decrease or increase the time depending on your saltiness preference).
- Leave the container on the kitchen counter at room temperature; there is no need to put it in the fridge.
4. Drain the fish!
- As soon as the 45 minutes are up, drain the fillets.
Serving:
Eating: The fish is ready right away! It is perfect on fresh black bread with farmhouse butter, fresh dill, and chopped red onion.
Storage: Since this is lightly salted fish, it will keep in a closed container in the refrigerator for 2–3 days. For longer storage, you can drizzle some high-quality cooking oil over the slices.
⚠️ Important to know: Since ide is a freshwater and coastal fish, there is a natural risk of parasites. To ensure that eating lightly salted fish is 100% safe, it is strongly recommended to place the fillets in the freezer (–20 °C) for at least 24–48 hours before salting (or immediately after salting and drying). This does not change the taste or texture of the fish, but it does ensure complete safety.
